Ingredients
For the turkey Club Pasta Salad:
½ pound elbow macaroni
2 cups grape tomatoes, halved
1 medium red onion, finely chopped
⅔ pound deli turkey, thinly sliced and torn into pieces
6 slices turkey bacon, cooked and crumbled
Chopped parsley, for garnish
For the Dressing:
½ cup mayonnaise
⅓ cup sour cream
4 tablespoons red wine vinegar (non-alcoholic substitute or naturally alcohol-free)
1 teaspoon garlic powder
Salt, to taste
Instructions
-
Cook the pasta according to the package instructions until al dente. Drain and set aside to cool slightly.
-
While the pasta cooks, prepare the dressing: In a large mixing bowl, whisk together mayonnaise, sour cream, red wine vinegar, garlic powder, and salt until smooth.
-
Add the slightly cooled pasta to the dressing and toss to coat. Let sit for 5 minutes to absorb flavor.
-
Stir in the tomatoes, red onion, deli turkey, and turkey bacon. Mix gently until well combined.
-
Adjust seasoning or add more mayo, sour cream, or vinegar to taste, depending on your dressing preference.
-
Cover and refrigerate for at least 3 hours or overnight for best flavor.
-
Garnish with chopped parsley just before serving.
Notes
For extra crunch, add diced cucumbers or celery.
Use whole-grain pasta for added fiber.
Want it spicier? Mix in a pinch of chili flakes or diced jalapeños.
