Description

A colorful, nutrient-packed salad layered in a jar with crisp vegetables, grains, and dressing. Perfect for meal prep and stays fresh for 5 days.


Ingredients

Scale

3 tbsp apple cider vinegar dressing

¼ cup chopped cucumbers

¼ cup shredded carrots

⅓ cup chickpeas

¼ cup cherry tomatoes

¼ cup cooked quinoa

¼ cup feta (or vegan alternative)

2–3 tbsp sunflower seeds

12 cups romaine lettuce


Instructions

  1. Pour dressing into jar.

  2. Layer cucumbers, carrots, chickpeas, tomatoes, quinoa, feta, seeds, then lettuce.

  3. Seal tightly and refrigerate upright.

  4. Shake before serving and enjoy straight from jar or pour into a bowl.
