1/4 cup extra virgin olive oil

5 large garlic cloves, crushed or minced

1½ teaspoons Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1/4 cup fresh Italian parsley, chopped (+ extra for garnish)

For the Chicken:

2 pounds boneless, skinless chicken breasts (about 4 large breasts)

Kosher salt (to taste)

Black pepper (to taste)

2 tablespoons extra virgin olive oil (for searing)


Instructions

  1. Prepare the Marinade
    In a large bowl, add the zest and juice of 1 lemon. Whisk in olive oil, garlic, Italian seasoning, red pepper flakes (optional), and parsley.

  2. Slice Chicken
    Slice each chicken breast in half horizontally to create thin cutlets. Pound lightly for even thickness if needed.

  3. Season and Marinate
    Pat chicken dry, season with salt and pepper. Add to marinade, turn to coat. Cover and refrigerate for 30 minutes to 2 hours.

  4. Sear the Chicken
    Heat olive oil in a cast iron skillet over medium heat. Cook chicken in batches, 4–5 minutes per side, until golden and cooked through (internal temp 160°F).
