These rich, chocolatey almond bites make the perfect party treat and a delicious alternative for anyone avoiding peanuts.
Ingredients
1/2 cup almond butter*
3 tablespoons butter, softened
3/4 cup powdered sugar
1 teaspoon vanilla extract
6 ounces semi-sweet chocolate for melting (chips or chopped)
optional: sliced almonds for garnish
Instructions
Using an electric mixer combine almond butter and butter until smooth.
Continue to mix, gradually adding in powdered sugar and vanilla extract until fully incorporated.
Using 2 teaspoonfuls, form balls and place on lined baking sheet. Cover and refrigerate for at least 20 minutes.
Melt chocolate according to package instructions.
Dip almond butter balls one at a time into melted chocolate, allowing excess to drip off. Place on waxed paper lined baking sheet. Optional, place a sliced almond on top of each ball. Allow chocolate to firm up. To quicken process, place in refrigerate. Store firmed up ball in airtight containers in the refrigerator until ready to serve.
Notes
Prep time does not include chilling.
Be sure to stir the almond butter thoroughly before measuring to ensure even consistency.
If you’re making these ahead of time, the almond butter dough can be tightly wrapped in plastic wrap and stored in the refrigerator for up to two days before shaping. Once formed into balls, they can also be covered and refrigerated for another day or two before dipping in chocolate.
The dough should be firm enough to roll into stable, smooth balls. If it’s too soft, add a tablespoon of powdered sugar at a time until the desired consistency is reached. For best results, chill the dough until it’s easy to handle.
Keep in mind that warm room temperatures or body heat can cause the dough to soften during handling. If that happens, simply return it to the refrigerator for a quick chill before continuing.
